• Dried Tuna is Handmade product made by the same recipe that the Phoenicians and the Romans used for over 2 000 years. Tuna loins are passed by sea salt, after washing and removing excess salt, are dried up in an environment with controlled temperature and humidity. This process was named by the Arabs as "Muxama", a name which comes from the Arabic "Musama" which means "dry".
  • Salicornia is a plant found in a saltwater environment. It grows in the salt marshes of the Algarve in the hottest months of the year. It is also called sea asparagus because it produces succulent stems around 40 cm long with a salty taste. This flavour derives from the direct absorption of the salt from the sea/soil where it grows. Its salty flavour allows Salicornia to be used in cooking instead of salt, and it can thus be considered "green salt". Salicornia can be used as a salt substitute, in cooking and as seasoning.

In bygone times, in the inland zones of the region, the cultivation of nuts and dry fruits was the main economic activity of families. The fruits and nuts were gathered manually using long sticks or rods to knock them from the trees, after which they where collected on the ground. The rooftops of Algarve houses were replaced by terraces and were used to dry fruit under the sun. As well as the tastes, Campos Santos has created a typical Algarve house for their biscuits.
