Salicornia is a plant found in a saltwater environment. It grows in the salt marshes of the Algarve in the hottest months of the year. It is also called sea asparagus because it produces succulent stems around 40 cm long with a salty taste. This flavour derives from the direct absorption of the salt from the sea/soil where it grows. Its salty flavour allows Salicornia to be used in cooking instead of salt, and it can thus be considered "green salt". Salicornia can be used as a salt substitute, in cooking and as seasoning.
